Hot Udon Vegan Noodle Bowl
This cold weather calls for hot udon!
1 cup of Vegetable broth
1/4 cup of butternut squash
1/2 cup of broccoli
1/4 cup of carrots
1 bundle of spinach
A few mushrooms
1/2 Red bell pepper
1 package of udon noodles
Bring a pot of water to a boil and add the package of udon noodles
While the noodles are cooking, slice your veggies (broccoli, red pepper, green onion, squash, carrots, and spinach) in small pieces and add to a bowl
In a large skillet, add the vegetable broth and veggies and cook until softened (5 - 10 minutes)
Add the noodles to the skillet and mix with the veggies. Toss well and add some soy sauce if you want (optional)
Using tongs, transfer to your coconut shell bowl and enjoy eating
