When we are busy with our hectic work schedules, why not try making something quick for dinner. This basil fried rice is so flavourful it is like nothing you have ever tasted before.

Ingredients
Diced carrots
Garlic
Ginger
1 Scallion and 1 onion
A few red chilis
Peas
Tofu
2 cups of rice
2 eggs
1/2 tsp sesame oil
Soy sauce
A few bunches of fresh basil
3 cloves of minced garlic
3 Thai chilli peppers
1 tsp of oyster sauce
1 tsp of light soy sauce
1 tsp of fish sauce
1 tsp of brown sugar
1 tsp of sesame oil
Sauce
Directions
Sauté diced carrots, garlic, ginger, long beans, white part of scallions/onions, thai chilli/red chilli on high.
Add your choice of protein (previously pan fried), I used tofu and peas, mix.
Add half a portion of leftover rice, Stir fry for 1 minute.
In a small bowl, beat two eggs with 1/2 tsp sesame oil, 1 tsp coconut aminos (I used @organikahealth) or you may use low sodium soy sauce.
Move aside the rice to one side and pour the egg mix onto the other side of the wok. Swirl it around, let it cool. Once 60% done, mix it with the rice.
Add the remaining rice, with sauce and continue tossing until everything is combined.
Turn off heat, add thai fresh basil (i used the regular one as i didn't have Thai basil at hand). Mix until wilted.
